This piece is inspired by my husband’s love for tomatoes. While working at an organic farm in Burlington, he developed a passion for learning about, caring for, and enjoying the many different varieties of tomatoes. Today, my husband works at a restaurant where he continues to explore his love for cooking with tomatoes and other local ingredients. He dreams of one day owning a restaurant that highlights the art of cooking and celebrates the beauty of locally sourced food, especially the tomatoes that have become such a meaningful part of his story.
